Now that I am back and (almost) fully rested from a whole 15-days in China, I am ready to get back into my normal schedule, more specifically my healthy diet. Even though I eat an extra serving of dessert or while on vacation, I don’t find myself buried in guilt because the most important thing is to enjoy and try out new food. Also, following this 5 healthy diet tips while on vacation helps a lot. These tips may be helpful if you are planning on a vacation in the next couple of months.

After 2 weeks of wonderful feasting, a light and healthy cleanse with beetroot was in order for the Saturday lunch. Grated Carrots & Beetroot Salad.. hmm..

Beef Rendang Malaysian style

Rendang is a spicy meat dish which originated from the Minangkabau ethnic group of Indonesia, and has become popular in Malaysia and other South Asian countries.  An 2011 online poll conducted by CNN International for by 35,000 people chose Rendang as the Number 1 dish of their ‘World’s 50 Most Delicous Foods’ list. How exciting when I read about it because Rendang is also one of my favourite dishes.

Carrot Okara Muffin (By Product of Homemade Soy Milk)

This Carrot Okara Muffin is the Part 3 of the Soy Series:
1. First make your Homemade Soy Milk
2. With the leftover soybean pulp (okara), and turn into Seaweed Okara Cakes (that taste like fish cakes)
3. If you don’t like fish cakes, you have to try this moist Carrot Okara Muffin. Okara makes a very good egg substitute for muffins and cakes.
