Ratatouille’s Ratatouille is by far my most elaborate and crazy cooking attempt. It took me 4 hours. Phew. My Wild Mushroom Quiche for Nutriplus baking competition looked easy compared to this dish. I have 2 confessions to make.
1st confession – I’m not a morning person and I become grouchy bear if I’m on empty stomach. So stay away from me in the morning, especially if I didn’t get my breakfast. I will try to get as much sleep as I possibly can before waking up, I’d rather get an extra 15 minutes sleep than using them to do my hair or make-up.
2nd confession – I l used to eat in the car while driving to work, and I still do now when I’m running around in the morning.
Egg “Muffins” are great breakfast ideas for anyone who’s busy in the morning and wants something that can be made ahead and eaten on-the-go. These Egg Muffins, or more like mini-quiches baked in muffin cups to create a grab-and-go breakfast that you can make on the weekends and then quickly reheat in the oven for a hot breakfast on the go. I can’t believe I have yet to post a hummus recipe after making this delicious appetizer/dip for the umpteenth time. Hummus, long a staple of Middle Eastern cuisine, made from chickpeas and tahini (sesame paste) is low in fat and high in protein. This might be the reason why the hummus craze has spread the world by fire on the tables of the health conscious communities. My eyes nearly popped out when MSN reported that store-bought hummus sales in US was USD530 million in 2012 and farmers are switching to planting this lowly chickpea to meet with the growing demand. Eggplant (or aubergine) is one of my favourite vegetable. Whenever I come across an eggplant recipe, my heart gives me a tug..
I have not heard of Nasu Dengaku (Grilled Miso Glazed Eggplant) until I saw the recipe topping up in a number of blogs recently.
